GRANNY'S KITCHEN: Easy Quiche

I love easy dinners!  And when given free fresh eggs at church today, I decided I wanted to make something with eggs.  I wasn't in the mood for a scrambled egg sandwich, so I decided to make a quiche.
After doing a quick we search, I found a recipe here.

Preheat oven to 400.  Spray a pie pan with oil.
Then I layered in a drained can of mushrooms and diced 1/2 onion. I topped that with a generous cup of shredded Monterry Jack cheese.

In a separate bowl, I whipped up 4 of the eggs, a cup of Bisquick, 2 cups milk, and some salt and pepper.  This I poured on top of the goodies in my pie plate and popped in the oven for 38 minutes.

YUMMY!! 

You can layer anything you want under the cheese.  Maybe next time I'll do a spinach and mushroom quiche!  Looking forward to trying this with different goodies mixed in.

GRANNY'S KITCHEN: Tuna Quesadilla's




 Again, I was in need of a quick dinner.  Where does all the time go??
I heated up some tortilla shells. Opened up 2 cans of tuna (using 1 can to fill 3 tortilla shells).



I grabbed a bag of shredded cheese from the fridge. I happened to have some Colby blend. I think any shredded cheese would work.


I finished heating these on the grill until the cheese was melted.  I thought they were good and my son actually thanked me for the dinner. :-)  always a good sign!

GRANNY'S KITCHEN: Chicken Alfredo with Broccoli


I just love some of the easy recipes from Campbell's soup! I use it to make my own 'Hamburger Helper' and in various other easy dishes. I have several cookbooks that use Campbell's soup, and I also use the website here to look for recipes.  Today I made easy Chicken/broccoli Alfredo using cream of mushroom soup.  I cooked up some chicken breasts, then cut it up. I added a can of the Cream of Mushroom soup and 1/2 can of soup. Add salt to taste (doesn't call for it, but I think it needs it!) Meanwhile, cook the spaghetti (recipe calls for linguini) adding a bag of frozen broccoli the last 4 minutes of the spaghetti cooking time.  Stir some cheese into the sauce mixture: recipes calls for 1/2 cup Parmesan.  I had a little Romano and some mixed colby/cheddar. Drain the pasta/broccoli and pour the sauce over. Quick, easy, and yummy!!  I see this as something I could quadruple (x4) for easy pot luck!!

GRANNY'S KITCHEN: Tomato/Carrot Soup

I was needing a quick meal this evening, and soup is always handy. But, sometimes I just feel as though it is not quite substantial enough. While trying to decide what to do, I just grabbed a can of carrots.  I put the Campbell's tomato soup in the pan, then poured the water off the carrots into the Campbell's can, then finished filling up the can from the tap.  I heated it on the stove. Add a little salt and a lot of pepper, and it made a tasty, quick meal!

GRANDMOTHER'S KITCHEN: Easy Casserole with Progresso Soup

Here is a quick easy casserole. I cooked 1 1/2 cups rice (dry) and spread out in a casserole dish. I poured over 2 cans of  Progresso SouthWestern Style Chicken soup (I had a .50/2 coupon, which was doubled at Ramey's..). I didn't think it had enough meat to satisfy my crew, so I reconstituted some chicken TVP and put on top of the rice. I sprinkled some cheddar cheese over the top and popped in the microwave about 5 minutes until the cheese was melted and the soup was hot. Yummy!
